Coq Au Vin Chicken Recipe Ingredients:
8 – 10 chicken legs

4 slices of bacon

1 ¾ cups of a fruity red wine or burgundy

¼ cup brandy

1 tablespoon butter

15 to 20 pearl onions, (very small peeled onions will do)

¼ teaspoon garlic powder, (2 chopped garlic cloves can be used instead)

2 cups thickly sliced mushrooms

1/3 cup chopped parsley

1 bay leaf

¼ teaspoon dried thyme

2 tablespoons flour

Salt and black pepper to taste
Coq Au Vin Chicken Recipe Instructions:
Preheat oven to 325 degrees.
In a large skillet, cook bacon until brown and crisp. Remove from the skillet and drain on paper towels.
Melt the butter into the bacon drippings. Season the chicken with salt and pepper then brown in the butter and bacon drippings over medium-high heat. Remove chicken from the skillet and place in a 5 ½ quart oven safe casserole or baking dish.

 
Place the whole, small onions into the skillet and cook until browned well. Then remove from skillet, leaving the drippings in the skillet, and add onions to the chicken.
Place the mushrooms and garlic to the skillet and brown slightly, then add to the chicken dish.
Place the four in the skillet with the remaining drippings and stirring constantly, cook 1 or 2 minutes. Do not brown. Stir in red wine and brandy and let it come to a boil. Then pour over the chicken and other ingredients in the baking dish.
Add the bay leaf and bacon and sprinkle with the thyme and 3 tablespoons of parsley.
Cover and bake for 1 hour. Remove from the oven and take out the bay leaf. Garnish with the remaining parsley and serve with your choice of sides.
