Apricot Chicken with Figs and Nuts Ingredients:

2 whole chickens, cut up

1 ½ cups dried apricots

1 cup dried figs, chopped

1 cup pecans, chopped

½ cup Madeira wine

½ cup red wine vinegar

6 garlic cloves, chopped fine

½ teaspoon ground ginger

1 teaspoon dried thyme

1 teaspoon cumin

1 teaspoon salt

¼ cup olive oil

Apricot Chicken with Figs and Nuts Instructions:

Save some money and buy whole chickens, then cut them up yourself. Here’s my video that will show you how to do it. It’s easy!
Place the cut up chicken in a roasting pan.
In a bowl, mix the dried figs, dried apricots, red wine vinegar, olive oil, garlic, ginger, cumin, thyme, and salt. Stir well.
Pour the apricot and fig mixture over the chicken or stuff whole chicken.
Cover and marinate over night in the refrigerator. Be sure to turn chicken several times while marinating.
Remove the chicken from the refrigerator and let stand, covered, for 1 hour before cooking.
Heat the oven to 350 degrees.
Arrange chicken in a single layer in two shallow baking dishes.
Pour marinade and Madeira wine over the chicken evenly.
Bake the chicken uncovered for 1 hour or until chicken is done and tender.
Sprinkle the chopped pecans over the chicken and serve the Apricot Chicken with Figs and Nuts with your favorite choice of sides.
