Roast Chicken with Sausage and Apple Stuffing

Roasted chicken with sausage and apple stuffing Ingredients:

1 Roasting chicken, between 5 and 6 pounds

1 pound seasoned pork sausage

2 granny smith apples, cored and diced into ½ inch cubes

1 cup chopped onions

1 beaten egg

2 cups of diced stale bread, or bread cubes for stuffing

½ cup butter, plus 2 tablespoons more

½ teaspoon dried rosemary

½ teaspoon dried thyme

½ teaspoon crushed sage

½ teaspoon salt

½ teaspoon black pepper

Roasted chicken with sausage and apple stuffing instructions:

In a saucepan, melt the ½ cup of butter. Stir in the black pepper, sage, rosemary, and thyme. Remove from heat and set to the side.
Heat the oven to 350 degrees.
In a large skillet or frying pan, over medium heat, melt the 2 tablespoons of butter. Add onions and cook until tender.

Place the butter and onions into a large bowl and set it to the side.
Add the pork sausage to the frying pan and crumble it while cooking and stirring until browned. Drain and add to the onions and butter.
To the pork sausage, onions, and butter, add 1 egg, bread crumbs, and apples. Combine this mixture well.
Gently stuff the chicken with the stuffing with sausage and apple recipe. Place any of the stuffing recipe that remains into a small, buttered baking dish.
Put the chicken into a large roasting pan with the breast up. Brush the chicken with the herded butter that you prepared earlier.
Roast in the 350 degree oven for 2 to 2 ½ hours, being sure to baste every 30 minutes.
Place the dish with the extra stuffing in the oven during the last 30 minutes of baking time and let it bake with the roasted chicken with sausage and apple stuffing.
