Chicken Romano Recipe

Chicken Romano is a great recipe for left over, cooked chicken. Or have you ever thought about the rotisserie chickens that the grocery store sells? Their great for making cooked chicken recipes like this one. Add some Parmesan and Romano cheese along with a few other ingredients and you have one of the best fast chicken recipes you’ve ever tasted!

Chicken Romano Recipe Ingredients:

2 cups cooked chicken, chopped

½ pound mushroom halves

1 pound fresh chopped spinach

¼ cup Italian seasoned bread crumbs

¼ cup grated Parmesan chees

½ cup grated Romano cheese

1 teaspoon salt

¼ teaspoon black pepper

¼ teaspoon nutmeg

3 tablespoons flour

1 ¾ cups milk

3 tablespoons butter

2 tablespoons water

Chicken Romano Recipe Instructions:

Heat the oven to 350 degrees.

In a large sauce pan, place the spinach with 2 tablespoons of water. Cover and let the spinach steam until tender.

Drain well and place the spinach in a 12×8 baking dish.

Melt butter in large sauce pan over a medium heat.

Stir in the flour and continue to stir as the flour cooks for one minute. Do not brown.

Gradually stir in milk, salt, pepper, and nutmeg.

Continue to cook while continually stirring until the mixture thickens and begins to boil.

Reduce heat to low and add the Romano cheese. Cook until the Romano cheese is melted.

Remove the sauce from the heat and add the cooked chicken and mushrooms.

Pour the sauce mixture over the spinach.

Mix the bread crumbs and Parmesan cheese.

Sprinkle the bread crumb and Parmesan mixture over the cooked chicken and Romano cheese mixture.

Cook 20 minutes until slightly browned on top and bubbly.
