Chicken Fajitas with Tomato Salsa
Chicken fajitas are always a favorite, and with your own fresh tomato salsa, it’s sure to be a hit Chicken Fajitas with Tomato Salsawith everyone. So get some ripe tomatoes and let’s get at it!
Chicken Fajitas with Tomato Salsa Ingredients:

8 boneless chicken breast halves

½ teaspoon salt

¼ teaspoon black pepper

1 garlic clove, crushed

1 onion, chopped fine

1 small bell pepper, chopped fine

3 tablespoons white wine

2 tablespoons lime juice

1 teaspoon hot pepper sauce

½ cup vegetable oil

16 flour tortillas, warmed

Sour cream and shredded lettuce

Fresh tomato salsa (recipe below chicken fajitas instructions)
Chicken Fajitas Instructions:
Mix oil, white wine, lime juice, garlic, hot pepper sauce, bell pepper, onion, salt, and black pepper in a large bowl.
Add chicken to the mixture, making sure chicken breast are well covered and coated in the fajita mixture.
Cover and marinate at least one hour in the refrigerator. Overnight if possible.
Heat grill to a medium high temperature.
Take the chicken breast out of the marinade. Save the marinade for basting.
Grill over the medium high heat, turning and basting with marinade frequently until chicken is cooked through but still juicy.
Cut cooked chicken fajitas meat into strips.
Spread tortillas with fresh tomato salsa, (recipe below) and sour cream. Add chicken and top with shredded lettuce and any other choice of toppings you wish.

Fresh Tomato Salsa Ingredients:

3 ripe tomatoes, chopped

1 onion, chopped fine

¼ cup fresh coriander, chopped

½ teaspoon salt

1 jalapeno pepper, chopped fine

1 tablespoon white wine vinegar

2 tablespoons olive oil
Fresh Tomato Salsa Instructions:
Combine all ingredients except the coriander and mix well. Stir in coriander just before serving.
