Baked Chicken in Stuffing Recipe
Baked chicken in stuffing recipe? Isn’t that backwards? Well, it may be but it’s delicious! This is a wonderful throw back to the way grandma baked a whole chicken in stuffing made from left over cornbread and biscuits. So let’s get at it.
Baked Chicken in Stuffing Recipe Ingredients:
3 to 4 pound whole chicken (cut up)
? cup of chopped onion
¾ cup chopped celery
3 cups of crumbled up biscuits
1 ½ cups of crumbled up cornbread
1 tsp crushed sage
¼ tsp ground black pepper
¼ tsp salt
3 cups chicken broth
2 raw eggs (well beaten)
1 hard boiled egg
2 tbsp. flour
¼ cup water
Baked Chicken in Stuffing Recipe Instructions:
Place the whole chicken pieces in a pot; add 5 cups of water and 1 tbsp. of salt. Cover the pot and heat to boiling, then reduce the heat and simmer until the whole chicken pieces are tender but not yet falling off the bone.
Remove from heat and place the chicken and place in a baking dish. The remaining water is your chicken broth for the stuffing recipe. There should be about 4 1/2 cups. Allow the broth to cool.
Stuffing Recipe Instructions:
Preheat the oven to 350 degrees
This is some good stuffing here! In a skillet melt the butter then add the onions and celery. Cook over medium heat until lightly browned.
In a bowl, add the crumbled biscuits and cornbread. Sprinkle in the sage, salt, and pepper mix it up a bit, and then add the onion and celery and mix that into the stuffing well. Now add the beaten egg and broth and mix that in.
Place the stuffing around the chicken and bake, uncovered, in the oven for 30 minutes.

Have the hard boiled egg chopped and ready along with the chopped giblets. In the skillet you cooked the onions and celery in, blend the flour and water into a smooth paste over medium heat. Stirring constantly, add remaining broth, giblets and egg. Continue to stir and boil gently until it has thickened.
