Stuffed Chicken and Potatoes
It’s more like stuffed potatoes with chicken actually. That’s right; we’re going to stuff the baking potatoes with the chicken. Those baking potatoes are going to be overstuffed in fact. And it’s going to taste so good you may not be able to handle it!
Stuffed Chicken and Potatoes Ingredients:
2 boneless chicken breast
2 large baking potatoes
½ cup shredded Mexican cheese
½ teaspoon ground cumin
¼ teaspoon dried oregano
½ teaspoon salt, (divided into ¼ teaspoon amounts.)
2 teaspoons softened butter
4 tablespoons sour cream
3 teaspoons milk
? teaspoon cayenne pepper
¼ teaspoon black pepper
Stuffed Chicken and Potatoes Instructions:
Wash baking potatoes and bake at 375 degrees for 1 hour or until tender.
While the potatoes bake, combine oregano, ¼ teaspoon salt, cumin, and cayenne. Rub the chicken with this mixture. Put the chicken breast in a small baking dish and bake with the potatoes at 375 degrees for 20 to 25 minutes or until done.
Cut the chicken into small pieces and set aside.
When the baking potatoes are done, cut a thin slice off the top. You may have to let the potatoes cool a bit. Scoop out the inside of the potatoes, leaving enough to form a thin shell inside the skin.
Mash the potato that you just removed in a bowl with the butter. Mix in the cheese, milk, pepper, sour cream, remaining salt, and the chicken pieces.
Spoon this mixture into the potato shells and place that onto a baking sheet. Bake at 375 degrees for 10 to 15 minutes or until heated.
