Spinach Chicken Roll Up
Spinach chicken is delicious! The feta cheese and spinach really makes this chicken roll taste special. This recipe is made for 2 people, but it’s not hard to increase the ingredients for more than 2.
Spinach Chicken Roll Up Ingredients:
2 boneless chicken breast
2 tablespoons onion, chopped fine
2 teaspoons of olive oil
6 cups fresh spinach
¼ teaspoon dill weed
4 tablespoons feta cheese
Spinach Chicken Roll Up Instructions:
In a small frying pan, cook the onion in the olive oil over medium heat until tender.
Stir in spinach and cook until just wilted.
Stir in dill weed, then remove from heat.
Place chicken between some cellophane wrap and pound with meat hammer until the chicken breast are ¼ inch in thickness.
Spoon the spinach mixture and the feta cheese down the center, dividing evenly for each breast.
Fold a side over the filling and roll up the chicken breast around the spinach and feta cheese tightly. Keep the chicken roll up rolled up by securing it with a wooden toothpick.
Place the chicken roll ups in the frying pan; seam side down, cover and cook over medium heat for 15 to 20 minutes until juices run clear. Turn occasionally.
Discard toothpicks before serving and enjoying your spinach chicken roll up with the side dish of your choice.
