Chicken and Bacon with Brown Gravy Ingredients:
1 whole chicken (3 to 4 pounds)

3 slices of bacon

2 tablespoons flour

1 tablespoon butter

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon paprika

1 carrot, cut into 2 halves

1 cup beef broth

Chicken and Bacon with Brown Gravy Instructions:

Heat oven to 450 degrees
Rub the cavity of the chicken with the half the salt, pepper, butter, and half of the thyme. Then place the carrot halves inside the chicken cavity.
Place the chicken into a roasting pan and place the bacon strips on top of the chicken breast. Sprinkle with the remaining salt and the paprika.
Roast the chicken at 450 degrees for 15 to 20 minutes to brown. Reduce the temperature to 350 degrees. Baste the chicken with beef broth. And continue to roast at 350 degrees for 1 hour to 1 hour 15 minutes or until juices run clear. Be sure to baste with beef broth every 15 minutes.
Remove chicken from the roaster to a platter and remove the bacon.
Heat the drippings from the pan over a medium heat. Add flour to ¼ cup of cold water and stir until dissolved. Stir the flour and water mixture into the drippings and bring to a boil while continually stirring. Pour in any remaining broth and cook until thickened. Season brown gravy with salt and pepper to taste.
Serve the chicken and bacon with brown gravy while hot with mashed potatoes or rice and you favorite vegetable.
