Stuffed Boneless Chicken Thighs
Chicken thighs can be stuffed! Often we see recipes for stuffed chicken breast, but stuffed chicken thighs are just as good.
Stuffed Boneless Chicken Thighs Ingredients:
8 boneless chicken thighs
1 teaspoon garlic salt
½ cup seasoned bread crumbs
2 tablespoons dry sherry
½ cup onions, chopped
¼ cup celery, chopped
3 slices of bacon
Stuffed Boneless Chicken Thighs Instructions:
Cook bacon over medium heat in a small skillet or frying pan until crisp. Drain on a paper towel then crumble it up.
Heat the oven to 350 degrees. Remove all but 2 tbsp. of bacon drippings from the skillet and set to the side.
Put the celery and onions into the skillet and cook 3 to 4 minutes until tender. Stir in crumbled bacon and remove from heat. Then mix in bread crumbs, dry sherry, and garlic salt.
Divide the bacon stuffing evenly onto each of the boneless chicken thighs. Fold the chicken thighs around the stuffing and secure with wooden toothpicks. Place in a baking dish and brush with the bacon drippings that was set to the side. Bake 1 hour until the chicken is tender. Remove the toothpicks and serve with the side dishes of your choice.
You’ll find that stuffed boneless chicken thighs are just as good as breast, maybe even better!
