Chicken Gumbo Recipe with Okra

Chicken Gumbo Recipe with Okra Ingredients:

3 pounds boneless chicken thighs

1 pound smoked sausage, sliced into half inch slices

1 pound okra, sliced

5 tablespoon vegetable oil

3 celery stalks, chopped

2 large onions, chopped

1 teaspoon cayenne pepper

2 tablespoons filé powder

1 teaspoon salt

1 teaspoon black pepper

¼ cup flour

3 chopped scallions

Chicken Gumbo Recipe with Okra Instructions:
Heat 2 tablespoons of oil in a large pot over medium heat. Add the okra and cook until golden brown, about 15 minutes. Add celery and onions and cook until tender, then add 4 cups of water and simmer 15 minutes.

In a large skillet, heat the remaining oil over medium-low heat, add smoked sausage and heat 1 to 2 minutes. Add boneless chicken thighs and brown on each side. About 5 minutes on each side. Add sausage and chicken to the okra mixture. Stir flour into the drippings in the skillet and cook, stirring constantly until you get a nut-brown roux. Remove from heat and stir in 1 cup of liquid from the okra mixture. Then add the roux to the okra mixture in the pot.
Bring the chicken gumbo recipe to a boil, stirring frequently. Reduce the heat and cover. Simmer about 50 minutes or until the chicken is tender.
Add scallions and filé powder to the chicken gumbo recipe with okra just before serving over cooked white rice and enjoy the chicken gumbo with your family and friends!
