Quick and Easy Vegetable Soup

If you have access to a vegetable garden you could create a simple soup that is comforting, hearty and healthy. In fact people often list veggie soup as one of the best “comfort” foods. With an abundance of fresh ingredients and some healthy soup recipes you can prepare a hearty meal in less than 1 hour. These soups also offer the added bonus of being deliciously affordable.

When fresh veggies are not readily available you can use canned vegetables as a substitute. Even when you use quick soup recipes you can still achieve wonderful complex flavors in an easy vegetable soup. The addition of seasonings and meats can make the meal richer and heartier. Discover how the following vegetable beef soup recipe can be ready for your table with a minimum of time and effort.

Ingredients

32 ounces of lean ground beef (2 pounds)

8 ounces of water

1 standard can of tomato paste

1 large can of green beans (cut)

1 can of corn (whole kernel variety)

dash of salt and pepper (season to taste)

1 can of tomatoes (diced)

1 can of mixed vegetables (29 ounce size)

Directions

Gently brown the ground beef in a heavy skillet (or Dutch oven). Use the medium heat setting on your stove.

Next combine the remaining ingredients (mixed vegetables, tomato paste, corn, green beans, canned tomatoes, water and seasonings) in the same pan.

Remember that canned vegetables frequently contain salt. For this reason you should be judicious with the amount of salt and seasonings that you are going to add to the recipe.

Cook on medium heat for 45 minutes.

Serve in warmed bowls and garnish with chopped chives (or parsley sprigs).
