6 to 8 boneless chicken breast

2 ¾ cups boiling chicken broth

3 tablespoons tomato paste

2 onions, chopped

2 tablespoons olive oil

1 cup brown rice

¼ teaspoon ground cinnamon

Salt and black pepper to taste

Easy Boneless Chicken Pilaf Recipe Instructions:

Season the boneless chicken breast with the salt and black pepper to taste.
In a large skillet, over medium heat, heat up the olive oil.
Place the chicken breast into the hot oil and cook until brown on all sides.
Remove the browned chicken breast from the frying pan and place on a paper towel. Set to the side to allow the oil to drain off the chicken.
Place onion in the skillet and cook until tender and just beginning to brown.
Stir in the brown rice, being sure to stir and coating the rice well with the hot olive oil. Cook until rice is translucent.
Stir in the tomato paste and then the boiling chicken broth, then the cinnamon.
Add the boneless chicken breast, arranging it on top of the rice.
Cover and reduce heat to low.
Cook until rice has absorbed most of the water and the chicken is tender.
