Chicken Breast and Red Pepper Sauce

Chicken Breast and Red Pepper Sauce Ingredients:
4 boneless chicken breast halves
¼ teaspoon hot pepper sauce
½ cup white wine
¼ teaspoon black pepper
1 teaspoon salt
¼ teaspoon dried thyme
½ teaspoon dried basil
1 tablespoon chopped parsley
2 tablespoons butter
1 chopped onion
2 medium tomatoes, peeled and chopped
1 chopped red bell pepper
Chicken Breast and Red Pepper Sauce Instructions:
Mix together the tomatoes, red pepper, onion, parsley, hot pepper sauce, salt, basil, thyme, and black pepper in a medium sauce pan.
Bring the pepper mixture to a boil then reduce the heat to low and simmer for 20 minutes.
Remove from heat and place in a food processor. Puree until smooth.
Return to sauce pan and place on very low heat to keep warm.
In a large skillet over medium heat; melt the butter.
Add the boneless chicken breast and cook on both sides until white. Approximately 3 minutes.
Pour the white wine into the skillet with the chicken breast and reduce heat. Simmer for 10 minutes.
Spoon the red peppers sauce onto plates and lay chicken breast on top of the red pepper sauce. And enjoy!
