Cornish Game Hen Stroganoff

Cornish Game Hen Stroganoff Ingredients:

2 cornish hens cut into quarters

3 tablespoons of butter

3 chopped green onions

¼ pound sliced mushrooms

¼ teaspoon black pepper

¼ teaspoon salt

1 tablespoon paprika

½ cup chicken broth

5 tablespoons all-purpose flour

½ cup sour cream

Cornish Game Hen Stroganoff Instructions:

In a plastic bag, combine 3 tbsp. of the flour, salt, and pepper. Place the Cornish game hen pieces into bag and shake until the Cornish hens are well coated.

Melt butter over medium heat in a skillet; then add the Cornish game hen pieces and brown on all sides. Cover, reduce heat and simmer until tender. Approximately 15 – 20 minutes. Remove the Cornish game hen from the pan to a serving platter and cover loosely with foil.

Increase the heat under the same skillet to you cooked the Cornish hens in to medium-high. And add the mushrooms and green onions. Cook until tender then remove from pan with a slotted spoon.

Reduce the heat under the skillet to medium and add the remaining flour along with the paprika to the drippings in the skillet. While stirring, cook for one minute. Gradually stir in the chicken broth until smooth. Bring this to boil, constantly stirring, cook until thickened. Reduce the heat and blend in the sour cream; do not allow to boil.

Pour this mixture over the Cornish game hen pieces and serve with your favorite veggies. This Cornish hen recipe is sure to fill you up and make your taste buds dance with joy!
