Sweet Potato Curry Chicken Tenderloin
Sweet potato curry chicken tenderloin is a favorite chicken recipe of mine. It is very easy to make and tastes very good. The sweet potato and the curry chicken flavors blend so well together!
Sweet Potato Curry Chicken Tenderloin Ingredients:
¾ pound of chicken tenderloin, cut into 1 inch pieces.
1 ? cups chicken broth
1 bell pepper cut into thin strips
2 green onions, sliced thin
1 tsp. curry powder
? tsp. garlic powder
¼ tsp. ginger powder
1 tablespoon olive oil
½ tsp. sugar
¼ tsp. crushed red pepper flakes
1 medium sweet potato, peeled and cut into 1 inch cubes
¾ cup coconut milk
1 tbsp. lime juice
Sweet Potato Curry Chicken Tenderloin Instructions:
In a frying pan, heat the olive oil over medium heat. Add bell pepper, green onions, chicken tenderloin, garlic powder, ginger, and curry powder; cook until chicken is no longer pink.
Add in the chicken broth, lime juice, red pepper flakes, and sugar.
Bring to a boil.
Reduce the heat and simmer uncovered until thickened. About 10 minutes.
Add the coconut milk and the sweet potato; increase heat and bring back to a boil.
Reduce heat again; cover the sweet potato curry chicken tenderloin and simmer until the sweet potato is tender. About 8 to 10 minutes. Serve with cooked rice and enjoy this wonderful curry chicken recipe!
