This easy chicken curry is perfect for a party snack, a salad lunch or an evening meal for all the family. It can be prepared the day before and kept overnight in the fridge, so you could use this curry chicken recipe when you want to prepare party food in advance. It also makes a splendid addition to any picnic or outdoor occasion where people are given something to eat.

Use fresh chicken breasts that have not been in the fridge for more than two days, or frozen chicken breasts that have been completely thawed. For a low fat version you should use fat-reduced mayonnaise in the dressing.

Any type of chutney can be used to add sweetness and crunchiness to the dressing for this chicken curry, either homemade or your favorite brand. Spicy chutney will add some extra heat, a bland chutney will keep it sweet.

The type of curry power you choose is up to you, but it does not need to be a hot curry and a milder mix will be suitable for all tastes.

Ingredients for Chicken Curry

3 whole chicken breasts
1 rib of celery
3rd of a medium onion
3rd of a cup of raisins
2 tablespoons of curry powder
Dressing for Curried Chicken Salad
1 cup of mayonnaise
1 tablespoon of Dijon mustard
2-3 tablespoons of chutney

How to Make Curried Chicken Salad

Step One: Bake the chicken breasts

Pre-heat the oven to 350 degrees Fahrenheit (177 degrees Celsius). Place the breasts in a roasting pan that has had a little olive oil spread over its inner surface, or put them on a metal rack inside the roasting pan.

Use the middle shelf of your oven and allow 30 minutes for the chicken to bake. Allow a longer time if you want to cook six chicken breasts or more. Chicken breasts are cooked when the juices run clear and the meat is white throughout. Leave them to cool after cooking.

Step Two: Mix the curry ingredients

Finely chop the celery and onion and mix them with the curry powder and the raisins.

Step Three: Prepare the dressing

Combine the mayonnaise with the Dijon mustard and the chutney and mix well with the dry curry ingredients.

Step Four: Dress the chicken

Cut the cold chicken breasts into cubes and gradually stir the meat into the curry dressing. Any extra seasoning can be added at this stage.

Step Five: Serve with salad

Curried chicken salad can include lettuce leaves and other salad ingredients, such as tomato, cucumber, sliced egg and any extras you might want to add. For a main meal, the chicken can be served with cooked vegetables, potatoes or rice.

Traditional Indian breads or side dishes can be served with this curry chicken dish. Mango chutney, onion chutney and green tomato chutney all make excellent condiments for curried chicken salad.
