It’s summer so time for some yellow squash recipes. How about we add some chicken leg quarters into the mix? Oh Yellow Squash with Chicken Leg Quartersyes and let’s not forget the white wine!

Yellow Squash with Chicken Leg Quarters Ingredients:

3 pounds chicken leg quarters

½ cup dry white wine

1 tomato, chopped

1 sliced onion

2 to 3 sliced yellow squash

¼ teaspoon cayenne pepper

¼ teaspoon paprika

½ teaspoon dried basil

¼ teaspoon dried marjoram

salt and black pepper to taste

3 tablespoons olive oil

Yellow Squash with Chicken Leg Quarters Instructions:

Rub salt and pepper into chicken leg quarters to season.
In a large skillet or frying pan, heat the olive oil over medium heat.
Add chicken leg quarters to pan and cook, turning occasionally until browned.

 
Then, add the cayenne pepper, basil, marjoram, paprika, tomato, onion, and yellow squash. Stir until well mixed.
Pour the white wine over the yellow squash and chicken leg quarters.
Cover and reduce heat. Let simmer 30 minutes. Add water if liquid evaporates too quickly.
Serve the yellow squash with chicken leg quarters next to your choice of sides and enjoy with a glass of that white wine!
