Hawaiian Style Chicken Recipe
Aloha! Here’s one of the best Hawaiian recipes I’ve come across. It’s a contender for my favorite chicken recipe as well. The coconut and pineapple give the chicken breast such a wonderful flavor of the islands. You may just want to call it aloha chicken because of the way the great taste greets your mouth!
Hawaiian Style Chicken Recipe Ingredients:
6 boneless chicken breast
¼ cup flaked coconut
1 (8 ounce) can pineapple chunks
1 (16 ounce) can drained sweet potatoes, quartered
¼ cup chopped onion
3 bananas peeled and split in half lengthwise
½ cup apricot preserves
½ cup ketchup
2 teaspoons chili powder
1 teaspoon curry powder
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon brown sugar
¾ cup plain bread crumbs
1 tablespoon cider vinegar
1 beaten egg
4 tablespoons olive oil
3 tablespoons butter
Hawaiian Style Chicken Recipe Instructions:
Combine butter, coconut, and chili powder in a small bowl.
Rub over the chicken breast, and roll up like a jelly roll, and secure with toothpicks.
Refrigerate for 1 hour.
In a saucepan, heat 1 tablespoon of the olive oil over medium heat.
Cook onions in the oil until tender.
Add ketchup, curry powder, brown sugar, apricot preserves, and vinegar. Mix well.
Then add sweet potatoes, bananas, and pineapple chunks. Cook gently for about 5 minutes. Keep warm over very low heat.
With beaten egg in one dish, and bread crumbs, with salt and pepper mixed in, in another dish; dip chicken breast rolls in egg, then roll in the bread crumbs, coating all sides.
In a skillet, heat remaining olive oil over medium heat.
Add breaded chicken breast rolls to the hot oil and brown on all sides until cooked through and tender.
Remove the chicken from the frying pan and place in shallow serving dish.
Remove sweet potatoes, pineapple, and bananas from the Hawaiian sauce and arrange over chicken.
Pour the remaining sauce over your Hawaiian style chicken recipe and enjoy!
