White Wine Chicken Cacciatore
If you were looking for an easy chicken cacciatore recipe, well you came to the right place. And even adjustable if you don’t like white wine because you can substitute chicken broth for the wine if you like.
White Wine Chicken Cacciatore Ingredients:
2 bone-in chicken breast halves
2 tablespoons olive oil, divided
¼ cup all-purpose flour
¼ teaspoon pepper
1 minced garlic clove
1 cup sliced mushrooms
½ cup onion, chopped
? cup tomato paste
¼ teaspoon each of oregano, thyme, and parsley
1 cup water
¼ teaspoon ground ginger
2 tablespoons of white wine or substitute chicken broth
White Wine Chicken Cacciatore Instructions:
Mix the flour, ½ teaspoon of salt, and the pepper and coat the chicken well with it. Heat one tablespoon of oil in a
skillet then add the chicken you’re going to use for the cacciatore and brown it. Take the chicken out of the skillet and keep it warm.
Now in that very same skillet, add the remaining oil and sauté the garlic, onion, and mushrooms until tender. Add the tomato paste and mix well. Then gradually add the water and white wine or substitute chicken broth for the wine.
Mix in the remaining ingredients and return the chicken to the skillet and bring all that good stuff to a boil. We’re well on the way to a delicious white wine chicken cacciatore now. Reduce the heat and simmer for 40 to 45 minutes.
Now pour yourself a glass of that wine, just one, and sit down and relax while the chicken cacciatore simmers. Watch a little television or read a book. But don’t forget your easy chicken cacciatore! When it’s done simmering, serve over some hot pasta and enjoy with that second glass of wine.
