Spanish Chicken Paella Recipe
Chicken paella is a variant of the chicken and rice dish known as Spanish Paella. A mix of land and sea animals, it’s a delicious taste of Spain!
Spanish Chicken Paella Recipe Ingredients:
3 pounds boneless chicken breast or thighs
½ pound smoked hot or mild Italian sausage, cut into ½ inch pieces
1 pound of shrimp, shelled and deveined
12 to 18 littleneck clams
3 cups chicken broth
1 onion chopped
1 garlic clove finely chopped
2 red peppers cut into 1 inch pieces
1 pack (10 ounce) frozen peas
1 ½ cups long grain white rice
¼ teaspoon salt
¼ teaspoon ground saffron
2 tablespoons of olive oil
Spanish Chicken Paella Recipe Instructions:
Heat oven to 350 degrees.
In a large skillet over medium-high heat, heat olive oil. Add chicken and brown on all sides. Remove chicken from the skillet to a plate.
Turn down the heat to medium, add the garlic and onion to the skillet and cook in the drippings until tender, then push to one side. Add rice to pan and cook while stirring constantly until translucent.
Add chicken broth, saffron, salt, and 1 cup water and bring to a boil.
Pour into a large shallow casserole dish, add sausage and chicken, then cover.
Bake in 350 degree oven for 40 to 45 minutes.
Remove from the oven and stir in shrimp, peas, and peppers. Place clams on top.
Recover and bake until rice and shrimp are tender and most of the liquid is absorbed.
Remove from oven and throw away any clams that did not open.
