Chicken Pasta Salad with Pesto
Chicken pasta is one of my favorite pasta salad recipes. A few ingredients for the pesto, some cooked chicken and pasta and you have an easy meal! There’s a recipe for the pesto, then another for how to put the salad together.
½ cup olive oil
¼ grated Romano cheese
¾ cup grated Parmesan cheese.
½ teaspoon salt
2 garlic cloves
2 cups fresh basil leaves
¼ cup walnuts
In a food processor or blender, place garlic, salt, walnuts, and olive oil. Blend until the garlic and nuts are finely chopped. Add the basil leaves and blend until chopped fine. Then mix in the Romano and Parmesan cheeses.
Chicken Pasta Salad with Pesto Ingredients:
1 cup Pesto
2 cups cooked chicken, chopped
½ pound penne pasta
12 cherry tomatoes halved
Chicken Pasta Salad with Pesto Instructions:
In a saucepan, bring salted water to a boil and cook the penne pasta until tender. Drain the hot water from the pasta then rinse under cold water. Drain well.
Combine the cooked chicken, pasta, and pesto in a bowl and toss until chicken and pasta are well coated with the pesto. Add the tomato halves and serve.
Enjoy the chicken pasta salad with pesto on a hot summer day when you want something cool and light.
