Shredded Chicken Egg Rolls
If you like barbecue chicken, you’re going to love shredded chicken egg rolls! You can buy chicken already shredded, or, shredded chicken isn’t hard to do yourself. Just boil some boneless chicken and shred it with a knife and fork.
Shredded Chicken Egg Rolls Ingredients:
1 cup cooked shredded chicken
Vegetable oil for frying, enough to cover bottom of skillet with 1 inch of oil.
4 egg roll wrappers
½ cup shredded Monterey Jack cheese
? cup barbecue sauce
Shredded Chicken Egg Rolls Instructions:
Combine the Monterey Jack cheese, shredded chicken, and barbecue sauce in a small bowl.
Put ¼ cup of the shredded chicken mixture in the center of each egg roll wrapper.
Fold the bottom corner of the egg roll wrappers over the shredded chicken filling.
Then fold each side over the filling.
Brush a little water on the remaining corners and roll up tightly to seal.
Heat 1 inch of vegetable oil in a deep skillet or frying pan until the oil reaches a temperature of 375 degrees.
Fry the shredded chicken egg rolls until golden brown on each side. Approximately 30 seconds per side. Drain on paper towels.
Serve the shredded chicken egg rolls warm with some barbecue sauce for dipping.
