Pancetta Wrapped Stuffed Chicken Breast
Pancetta; what is pancetta? Many call it Italian bacon. But unlike American style bacon, it’s not smoked. Pancetta, or Italian bacon, is actually cured in salt along with other spices like pepper, fennel, and nutmeg. Now in this recipe we’re going to wrap that lovely flavor around some stuffed chicken breast.
Pancetta Wrapped Stuffed Chicken Breast Ingredients:
4 boneless chicken breast
4 wide pancetta slices
10 ½ ounces feta cheese
4 tablespoons cranberry sauce
olive oil
? teaspoon salt
¼ teaspoon black pepper
Pancetta Wrapped Stuffed Chicken Breast Instructions:
Heat oven to 400 degrees.
Lay each boneless chicken breast, separately, between two pieces of cellophane cling wrap, and beat the pieces of boneless chicken breast to ¼ inch thicknesses each. Then remove the breasts from the film.
On each chicken breast, spread 1 tablespoon of cranberry sauce. Then divide the feta cheese and place in the middle of each boneless chicken breast.
Sprinkle salt and pepper over the breast. Now fold each chicken breast over so the cranberry sauce and feta cheese are enclosed in it.
Wrap each stuffed chicken breast with a slice of pancetta tightly then place in a baking dish or baking pan and drizzle some olive oil over each pancetta wrapped stuffed chicken breast.
Bake 20 to 25 minutes or until juices run clear and the feta cheese is melted.
