Lemon Chicken Stir fry with Pears and Ginger

Lemon Chicken Stir fry with Pears and Ginger Ingredients:
1 pound boneless chicken breast, cut into 1 inch cubes
2 fresh pears, cored and sliced
1 teaspoon grated lemon peel
2 tablespoons lemon juice
3 green onions cut into 1 inch pieces
½ pound snow peas
2 teaspoons fresh grated ginger
2 minced garlic cloves
2 teaspoons sugar
2 teaspoons cornstarch
2 tablespoons soy sauce
3 tablespoons water
2 tablespoons olive oil
Lemon Chicken Stir fry with Pears and Ginger Instructions:
For the sauce:
Mix lemon peel, soy sauce, sugar, lemon juice, cornstarch, garlic, water, and ginger.
For stir fry:
In a large wok or frying pan, heat olive oil over high heat, and then add chicken. Stir fry until chicken is opaque, about 1 ½ to 2 minutes. Remove from pan.
Place snow peas in pan and stir fry for about a minute then reduce the heat to medium and return chicken to the pan. Add green onions, sauce, and pears, Cook for about 3 minutes or until sauce boils and thickens.
