Indian Curry Chicken and Apple
A perfect way to use leftover chicken, Indian curry is delicious and with the added flavor of apple, it’s sure to please. This wonderful curry chicken recipe can be topped with a variety of things such as raisins, peanuts, chopped onion, or even crumbled bacon!
Indian Curry Chicken and Apple Ingredients:
4 cups cooked chicken, chopped
1 cup chicken broth
1 teaspoon lemon juice
1 can (16 ounces) stewed tomatoes
1 cup chopped onion
1 cup apple, peeled and chopped
2 tablespoons butter
1 tablespoon curry powder
Indian Curry Chicken and Apple Instructions:
In a large skillet over medium heat, melt the butter.
Add onion to the skillet and cook until tender.
Mix in tomatoes along with their juice, apple, curry powder, lemon juice, and chicken broth. Let simmer uncovered for 30 to 35 minutes.
Add the cooked chicken and cook until heated through.
Serve the Indian curry chicken and apple with garnishes such as crumbled bacon, toasted coconut, chopped peanuts, or mandarin oranges.
