Elegant Roast Chicken Dinner
If you want a dinner that’s a bit fancier, then this elegant roast chicken dinner will fill the bill. It’s a bit different than many chicken dinners because we’re going to throw some roasted garlic and a vegetable bundle into the mix. So let’s get busy with this roast chicken dinner!
Roast Chicken Ingredients:
Roasting chicken (5 ½ to 7 pounds)
1 teaspoon black pepper
1 teaspoon salt
3 cups herbed seasoned stuffing mix
Vegetable Bundle Ingredients:
1 bundle of green onions, blanch just the stalks
1 large carrot
1 pound of steamed green beans
Roast Garlic Ingredients:
3 heads of garlic
4 tablespoons of melted butter
1 tablespoon of Basil
¼ cup of olive oil.
Elegant Roast Chicken Instructions:
Preheat the oven to 350 degrees and prepare the herbed seasoned stuffing mix as the package directions say. Rub the chicken down with the salt and pepper. Stuff the cavity of the chicken with the stuffing and tie the legs together to hold all that good stuff in. Oh yeah, this one of the best roast chicken dinners you ever had.
Now place the chicken on a rack in the roasting pan. Be sure to use a meat thermometer in the thickest part of the thigh. Roast till the thermometer read 180 degrees. It’ll probably take about 2 hours for the roast chicken to be done. Now we’re on to the roast garlic.
Roasted Garlic Instructions:
Mix the melted butter, basil and olive oil in a bowl. Cut the garlic heads in half but don’t peel them. Then brush the butter, basil, and olive oil. Put the garlic on a small cookie or baking sheet and roast beside the roast chicken.
Vegetable Bundle Instructions:
With a knife or vegetable peeler, slice or peel the carrot into thin strips that are about the length of the green beans. You’re going to need a bowl of ice water and a saucepan of boiling water. Drop the carrot strips into the boiling water until they are limp. It shouldn’t take longer than 10 seconds for the vegetable to get limp. Then quickly remove them from the boiling water and plunge them into the ice water. This shocks the vegetable and stops the cooking process. Now form a serving size bundle with the green beans and carrots and tie each with the green onion stalks to hold them together.

Remove the chicken and garlic from the oven. The roast chicken needs to stand for about 15 minutes before you carve it. Then place the stuffing in a serving dish and carve your chicken.
