Chicken Ala King

Chicken Ala King can be a great comfort food. And a wonderful way to use leftover chicken from a past dinner! The
hardest part about it is opening the broth. So read on for one of those delicious leftover chicken recipes that very
well may become a beloved comfort food for you and your family.
2 tbsp butter
1/3 green pepper, cut into strips
1/4 lb fresh mushrooms, sliced
1/4 cup flour
1 1/3 cups of cream, or evaporated milk
1 1/3 cups of chicken broth
1/2 pimiento, cut into strips
salt and pepper to taste

For most leftover chicken recipes, 2 cups of meat is recommended to make it meatier. But for this Chicken Ala King
recipe, use what you have. If you don’t have leftovers, 2 cups of diced, steamed chicken will be great too.
In the top of a double boiler, over direct heat, melt the butter. Then add the green pepper and mushrooms. Cover
and let simmer for 5 minutes. Then lift out the pepper and mushrooms, leaving the butter in the boiler. Mix the flour
into the butter and add the cream, or evaporated milk, (either will work fine for chicken ala king), also add the broth,
salt, and pepper at this time and cook stirring constantly, still over direct heat, until the sauce boils and thickens.
Once the sauce for the chicken ala king has thickened, add the boneless leftover chicken, pimiento, green pepper,
and mushrooms. Place over boiling water, cover and cook until chicken is heated through.
Serve this chicken ala king over rice, crisp noodles, toast or even biscuits and enjoy this wonderful comfort food
