Asparagus Chicken Stir Fry

 Do you want to know how to cook asparagus differently? I’ve been looking through some asparagus recipesAsparagus Chicken Stir Fry, and some chicken stir fry recipes came to mind. Sure enough, there it was!! Asparagus Chicken Stir Fry! It’s designed to serve two so it’s just right for a couple of people who enjoy asparagus recipes. So let’s do this thing. The sooner we dig into the cooking the sooner we can get to digging into the eating!

Ingredients:
½ cup fresh asparagus cut into 1 inch pieces
2 teaspoons of cornstarch, divided
1 egg white
¾ pound of boneless chicken breast cut into cubes
2 teaspoons cooking oil
¼ cup chicken broth
2 tablespoons soy sauce
2 teaspoons sugar
3 tablespoons unsalted cashews
2 green onions, chopped
1 cup hot cooked rice

 

Instructions:

Steam the asparagus by placing it in a steamer basket over a saucepan with about 1 inch of water. Bring the water to a boil then place a cover over it and let the asparagus steam for about 5 minutes. In most asparagus recipes the vegetable should be crisp-tender, asparagus chicken stir fry is no different. Drain and keep the asparagus warm.

In a small bowl, mix 1 teaspoon of cornstarch and the egg white with a fork until smooth. Add the chicken cubes and toss them around in the egg and cornstarch mixture to get the meat coated well. You know the meat has to be coated good in chicken stir fry recipes. Heat the oil in a skillet or wok and stir fry the chicken until it’s no longer pink.

Place the remaining cornstarch in a bowl and stir in the chicken broth, soy sauce, and sugar until smooth. Then gradually add to the pan with the chicken and bring to a boil. Cook it, constantly stirring for 1 minute or until it has thickened to your desired thickness. Now, stir in the cashews, green onions, and asparagus.

Now you’re ready to serve this delicious asparagus chicken stir fry over that hot cooked rice and ummmm mmmm it’s good! You’re going to enjoy this and I’m going move it closer to the front of my chicken stir fry recipes, because I’m going to have to cook this more often!
