Baked Chicken with Sweet Potatoes
Southern style baked chicken is always a favorite of many. If you add sweet potatoes to it, everybody will be happy. Baked Chicken with Sweet PotatoesIn this recipe we cook the baked chicken breast halves and the sweet potatoes in the same baking dish that will make both taste great!

Baked Chicken with Sweet Potatoes Ingredients:

4 chicken breast halves

1 can (15 ounces) sweet potatoes in syrup (drain and reserve ¼ cup syrup)

¼ cup raisins

1 cup evaporated milk

2 tablespoons honey

¼ teaspoon ground cloves

1 teaspoon salt

¼ teaspoon nutmeg

2 tablespoons olive oil

Baked Chicken with Sweet Potatoes Instructions:

Preheat oven to 350 degrees.
Heat olive oil in a large skillet over medium heat, place chicken breast halves in the hot oil and cook until browned lightly on all sides. Drain on paper towels.

 
Place chicken breast halves in a baking dish leaving room between breasts.
In a bowl, mix 1 cup evaporated milk, ¼ teaspoon ground cloves, 1 teaspoon salt, ¼ teaspoon nutmeg, and 2 tablespoons honey. Pour the mixture over the chicken.
Bake the chicken breast halves for 10 minutes, then take out of the oven. Add the sweet potatoes to the baking dish, arranging them between the chicken. Pour the ¼ cup of reserve sweet potato syrup over the chicken and bake for 40 minutes or until chicken is done and tender.
