Tomato Cream Sauce over Grilled Chicken Breast Ingredients:
4 chicken breast (Bone-in or boneless chicken breast is fine. The tomato cream sauce is delicious with both.)

¼ cup olive oil (Enough to brush the chicken breast with a couple times and you grill it.)

3 tablespoons butter

2 to 3 medium size tomatoes, chopped

½ teaspoon Italian seasoning

? to ¼ teaspoon of garlic powder (this recipe is easy, all depends on how much you like garlic.)

1 chopped shallot

? cup sweet vermouth

½ cup heavy cream

Salt and pepper

Tomato Cream Sauce over Grilled Chicken Breast Instructions:

Lightly coat chicken breast with olive oil, salt and pepper to taste. Then place on the grill over a medium heat and cook for 3 to 5 minutes, brush with olive oil and turn. Cook 3 to 5 more minutes. Continue like this until the grilled chicken breast is done, but not dry. Remove to a serving platter and cover with foil to keep it warm.

Melt butter in a saucepan over medium heat then add shallot and cook until it’s soft. Add the chopped tomatoes and cook for 2 minutes. Stir in the vermouth and bring to a boil. Boil for 5 minutes.

Pour the sauce into a food processor and puree until smooth. Pour it back into the saucepan, stir in the heavy cream and let simmer for 2 minutes. Pour sauce over chicken and serve.

Tomato cream sauce and the grilled chicken will go great with Alfredo noodles, garlic bread and a fresh salad made with veggies from your garden.
