Stuffed Apricot Chicken Breast
Apricot chicken breast stuffed with almonds scallions and cheese! So good!! The preparation of the apricot sauce is easy and the stuffed chicken breast is tender and juicy.
Stuffed Apricot Chicken Breast Ingredients:
4 boneless skinless chicken breast halves
2 tablespoons honey
½ cup dried apricots
¼ cup apple cider vinegar
¼ teaspoon salt
3 sliced scallions
¼ cup toasted almonds, chopped
1 cup shredded Swiss cheese
Stuffed Apricot Chicken Breast Instructions:
Put ½ cup of water in a saucepan and add the salt, vinegar, honey, and apricots. Bring it to a boil and then reduce the heat and simmer for 15 minutes. Then puree in a blender to make it smooth and set aside.
Heat oven to 325 degrees.
Cut a lengthwise pocket in the chicken breast halves.
Mix the almonds, scallions, and cheese in a bowl; then stuff the pockets you cut in the chicken breast with the almond, scallion, and cheese mixture.
Place the stuffed chicken breast in a baking dish and pour the apricot sauce over the chicken breast.
Cover with aluminum foil, place the apricot chicken in the preheated oven and bake for 25 to 30 minutes. Then baste with the drippings in the baking dish and bake uncovered for 15 minutes more, until the stuffed apricot chicken is tender.
