Hot Chicken Enchilada Bake

Hot Chicken Enchilada Bake Ingredients:
For the chicken…
2 cups cooked chicken, chopped
2 tbsp. butter
1 cup chopped onion
¼ cup chopped bell pepper
1 to 2 chopped jalapenos
1 chopped cayenne pepper
For the sauce…
2 ½ cups chicken broth
3 tbsp. butter
1 teaspoon ground coriander
¾ tsp. salt
¼ cup all-purpose flour
Also needed…
1 cup sour cream
1 ½ cups Mexican style shredded cheese
12 (6-inch) flour tortillas
Hot Chicken Enchilada Bake Instructions:
Melt 2 tbsp. of butter in a saucepan over medium heat, and cook the onion and bell pepper until its tender. Then mix together in a bowl with the chopped chicken, jalapeno, and cayenne pepper. Set this aside for the moment.
For the sauce; melt the 3 tbsp. of butter over medium heat in that same saucepan. Then stir in the coriander, salt, and flour. Now stir in the chicken broth. Cook while stirring until it has thickened. Cook and stir 1 more minute, then remove from heat. Add the sour cream and ½ cup of the cheese.
Add ½ cup of the above sauce mixture to the chicken and pepper mixture. Spoon the hot chicken enchilada mixture onto the tortillas, dividing it equally on each tortilla, and then roll up your chicken enchiladas.
Place the hot chicken enchiladas in a baking dish and pour the remaining sauce over them. Sprinkle with the rest of the cheese. And bake in the oven at 350 degrees for about 20 to 25 minutes, or until bubbly.
