Chicken Roulade with Mushrooms

Chicken Roulade with Mushrooms Ingredients:

4 boneless chicken breasts halves (with a meat hammer, tenderize by pounding the chicken breast to a 1/4” thickness)

½ cup of light cream

1 (4.5 ounce) can or jar of sliced mushrooms

¼ teaspoon rubbed sage

¾ cup chopped onion

2 tablespoons bread crumbs

3 tablespoons butter

1 tablespoon olive oil

1 tablespoon flour

¼ cup white wine

Salt and pepper to taste
Chicken Roulade with Mushrooms Instructions:

Heat the oven to 375 degrees
Open the mushrooms and drain. Separate half the mushrooms and chop them, the other mushrooms sliced as they are.

Melt 2 tablespoons of the butter into the 1 tablespoon of olive oil in a skillet, over medium heat. Then add ½ cup of the onions and cook until they begin to become tender. Add the chopped mushrooms and cook until everything starts to brown. Take the mushrooms and onions off the heat and add the bread crumbs and sage. Season with the salt and pepper and stir.
Layout the boneless chicken breast and spread the mixture of mushrooms, onions, and bread crumbs evenly over them. Fold the sides of the boneless breast over the mushrooms and onion and secure by sticking toothpicks through the open sides chicken breast. Then place in a 2 inch deep, oven safe baking dish.
Cover the baking dish with aluminum foil and bake 13 to 15 minutes; then remove the foil and bake another 13 to 15 minutes or until the boneless chicken breast is tender and moist. Remove from oven and lay some foil over the baking dish making sure steam can escape and let the Chicken roulade with mushrooms rest a few moments.
While the boneless chicken breast is resting, melt the remaining 1 tablespoon of butter in a sauce pan on a medium heat. Stir in the rest of the onions and cook 1 ½ to 2 minutes then add the sliced mushrooms and cook 2 to 3 minutes more. Now add the flour. It’s important that you continually while adding the flour to keep it from clumping and burning. Slowly add the cream and wine while stirring until smooth. Bring this mixture to a boil and cook while stirring until it’s thickened. Season with salt and pepper.
