Mushroom Chicken Livers and Rice
Chicken livers and rice is a southern favorite. Considered a comfort food by many southerners, this chicken and rice dish has the added flavor of the mushroom along with the normal onion that people down south love!
Mushroom Chicken Livers and Rice Ingredients:
1 small tub of chicken livers (approximately 1 pound), drained and cut into ½ inch pieces.
½ cup sliced mushroom
½ cup chopped onion
3 cups chicken broth
4 tablespoons butter
½ teaspoon black pepper
3 tablespoons dry white wine
½ cup of grated Parmesan cheese
1 ½ cups long grain white rice
Mushroom Chicken Livers and Rice Instructions:
In a saucepan, bring chicken broth to a boil. Add the rice, cover, and reduce the heat to low. Cook about 15 minutes or until rice absorbs the chicken broth and is tender.
While that cooks, in a large skillet over medium-low heat, melt the butter. Add the livers, onions and mushrooms and cook for 5 to 8 minutes. Stir in the pepper and wine and simmer for 2 minutes.
Divide rice onto plates and spoon the mushroom chicken livers mixture over each serving.
Serve the mushroom chicken livers and rice with your favorite vegetable and enjoy!
