Chicken Piccata Recipe
Chicken piccata is much like veal piccata, but it falls in the category of boneless skinless chicken breast recipes. And just as delicious!
Chicken Piccata Recipe Ingredients:
2 pounds of boneless skinless chicken breast
1 tablespoon olive oil
2tablespoons butter
½ cup all-purpose flour
1 teaspoon salt
¼ teaspoon black pepper
3 tablespoons dry white wine
3 tablespoons lemon juice
1 lemon, sliced thin
Chicken Piccata Recipe Instructions:
In a zipper seal or plastic food storage bag, mix salt, pepper, and flour. Add boneless skinless chicken breast, 2 at a time, and shake to completely coat chicken, shaking off excess as you remove breast from the bag.
In a large skillet, heat olive oil and butter over a medium heat. Place chicken breast in hot oil and cook 3 minutes per side or until tender and opaque. Remove from the skillet and keep warm.
Add the wine to the juices in the skillet. Cook for about a minute while stirring up the brown bit on the bottom of the skillet. Stirring lemon juice and return chicken to the pan and cover the boneless skinless chicken breast with the lemon slices. Cook until sauce slightly thickens, approximately 3 minutes.
Serve with your sides of choice and maybe a glass of that white wine and enjoy your Chicken Piccata!
