Raspberry Wine Chicken Breast

Raspberry Wine Chicken Breast Ingredients:
8 Boneless chicken breast halves, pounded to ¼ inch thickness
¼ teaspoon salt
¼ teaspoon black pepper
½ cup canned chicken broth, diluted with ½ cup water
½ pint fresh raspberries
3 tablespoons raspberry liqueur
¼ teaspoon raspberry wine vinegar (red wine vinegar can be substituted)
4 tablespoons of butter
Raspberry Wine Chicken Breast Instructions:
Pound the boneless chicken to ¼ inch thickness, and then season with salt and pepper.
In a large skillet, melt 2 tablespoons of the butter over a medium heat.
Add the boneless chicken breast and cook 3 minutes per side, until tender and opaque. Avoid browning.
Remove chicken from heat and place on serving platter. Cover with foil to keep warm.
To the pan drippings, add the raspberry wine vinegar and boil approximately 2 minutes. Until reduced to about 1 ½ tablespoons.
Add chicken broth and raspberry liqueur. Boil until reduced by half.
Remove from the heat and stir in remaining butter and fresh raspberries.
