Pepper Chicken and Mushroom Casserole
For a delicious, light and healthy meal, you just won’t be able to beat pepper chicken and mushroom casserole. The bell pepper and onion add a wonderful flavor to the great chicken mushroom taste. And easy to prepare as well!
Pepper Chicken and Mushroom Casserole Ingredients:
1 ½ pounds boneless chicken breast
2 medium green bell pepper, chopped
2 medium red bell pepper, chopped
2 cups chopped onion
2 cups mushrooms, sliced
½ teaspoon crushed red pepper
½ teaspoon oregano
1 cup hot skim milk
½ cup white wine
2 tablespoons olive oil
Pepper Chicken and Mushroom Casserole Instructions:
Heat the oven to 350 degrees.
Cut the boneless chicken into 1 inch cubes.
In a flameproof casserole dish, heat the oil on stove top over a medium-low heat.
Add the chicken cubes to the casserole along with the bell pepper, onion, mushrooms, oregano, and crushed red pepper.
Cook 6 to 9 minutes or until chicken is opaque and onions are tender.
Add the white wine and cook for 5 more minutes.
Pour the hot skim milk over the chicken and cover.
Place the pepper chicken and mushroom casserole into the oven and bake for 30 minutes. Serve with biscuits or dinner rolls and enjoy!
