Mexican Chicken Corn Chowder Ingredients:

2 cups chicken broth

2 cups chopped cooked chicken

1 can (4 ounce) chopped green chilies (Hot or mild, it’s your choice on how hot your Mexican Chicken Corn Chowder is.)

1 large onion

1 mid-size bell pepper

? Tsp. garlic powder

1 (14 ounce) can diced tomatoes (drained)

2 (16 ounce) cans of cream corn

1 (16 ounce can) whole kernel corn

1 Tbs. taco sauce (Again, it’s your choice, mild, medium, or hot. It all depends on how hot you want the chicken chowder to be.)

1 cup milk

¾ cup Mexican 4 cheese (shredded)
Mexican Chicken Corn Chowder Instructions:
Melt the butter in a pot, that’s large enough to hold all the ingredients of the Mexican chicken corn chowder, over medium heat. Add the bell pepper, onion, and garlic powder. Cook for approximately 4 minutes; or until the onion is tender.
Then add the diced tomatoes and chilies and stir to blend. While stirring, add the remaining Mexican chicken corn chowder ingredients with the exception of the cheese.
Bring the Mexican chicken corn chowder to a boil, then reduce the heat and let it simmer for 30 minutes.
Stir in the Mexican 4 cheese and continue to cook until the cheese is melted, then serve this delightful and zesty chicken chowder. You can adjust how hot the Mexican chicken corn chowder is by your choice of mild, medium or hot chilies and taco sauce.
