Honey Roasted Chicken with Mint Jelly

Honey Roasted Chicken with Mint Jelly Ingredients:

1 roasting chicken, 4 to 5 pounds

¼ cup honey

2 teaspoons mint jelly

2 tablespoons lemon juice

1 teaspoon grated lemon peel

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

2 tablespoons butter
Honey Roasted Chicken with Mint Jelly Ingredients:

Heat the oven to 350 degrees.
Place the roasting chicken into a large roasting pan with the breast up.
Season the cavity and skin with salt, black pepper, and paprika.
Roast chicken for 1 hour.
While the chicken is cooking, in a saucepan, combine, the honey, mint jelly, butter, lemon juice, and lemon peel.
Cook over low to medium heat until the butter and jelly is completely melted.
Brush the honey glaze onto the chicken and cook an additional 20 minutes, or until roasted chicken is done and tender.
Remove the Honey Roasted Chicken with Mint Jelly from the oven and let sit 10 minutes. Carve and serve with your choice of sides.
