1 whole chicken cut up into pieces
4 tablespoons melted butter
¼ cup sesame seeds
1 cup bread crumbs
¼ cup parmesan cheese
2 tablespoons parsley flakes
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon paprika
¼ teaspoon ground ginger
1 tablespoon cornstarch
1 (10 ounce) jar currant jelly
Zest and juice of 1 orange
Zest of 1 lemon
1 tablespoon Dijon mustard
3 drops of tabasco sauce
Citrus Chicken Bake Recipe Instructions:
Heat the oven to 350 degrees.
In a dish, mix sesame seeds, Parmesan cheese, bread crumbs, salt, pepper, and paprika.
Put the melted butter in another dish.
Roll chicken pieces in the butter first; then roll them in the bread crumbs making sure they get well coated.
Place the chicken pieces into a baking dish and bake them for 45 to 50 minutes; until brown and tender.
In a sauce pan, mix the corn starch and ginger. Then add the orange juice, Tabasco sauce, currant jelly, and mustard. Stirring constantly, simmer over medium heat until smooth. Then stir in the lemon and orange zest. Serve the chicken pieces with the citrus mixture as a dipping sauce.
