Chicken Stew Ingredients:

1 whole frying chicken, cut up. 3 to 4 pounds is good for this campfire chicken stew recipe.

3 or 4 medium potatoes peeled and sliced.

1 cup of carrots, sliced thin

1 medium bell pepper, sliced

1 (10 ¾ ounce) can of cream of mushroom soup

¼ cup water

½ teaspoon salt

¼ teaspoon pepper

Campfire Chicken Stew Recipe Instructions:

 

If you’re cooking this on a campfire, you’ll need a cooking rack of some sort over the campfire. If this is going along with grilling ideas, you already have a rack on the grill.

Brown the chicken over a medium heat; around 3 minutes on each side depending on how hot your campfire is.

It’s going to be smelling good enough to eat already, but you need to save it for the campfire chicken stew. You’re going to need 4 sheets of heavy duty aluminum foil, about 18 x 12 inches. Put two pieces of chicken on each sheet.

Divide the carrots, potatoes, and bell pepper in equal amounts among the chicken. Top each with 2 tablespoons of soup, 1 tablespoon of water, and divide the salt and pepper over the chicken.

Fold the foil around the chicken and other ingredients and seal tightly.

Cook on the grill or campfire, over medium heat, for 20 minutes. Then turn and cook the other side 20 or 25 minutes longer; or until the veggies are tender and the juices of the chicken are clear.
