You can use fresh chicken breasts or frozen ones that have been thoroughly thawed. If you use condensed chicken soup in this baked chicken and rice recipe, you need to add a extra cup of water. Homemade chicken stock or a chicken stock cube dissolved in hot water could be used in place of the canned chicken broth.

Ingredients for Baked Chicken and Rice
1 can of chicken soup
1 can of chicken broth
4 chicken breasts
2 cups of rice
2 cups of hot water

How to Make Baked Chicken and Rice

Step One: Prepare an ovenproof dish

Spray the inside of a rectangular dish with a non-stick cooking spray, or coat it evenly with a little cooking oil. Pre-heat the oven to 375 degrees Fahrenheit.

Step Two: Add a layer of rice and top it with the chicken breasts

The rice should be evenly spread across the base of the dish and the chicken breasts need to be placed on top of the rice.

Step Three: Blend all the liquids and pour over the chicken and rice

After the hot water, chicken soup and chicken broth have all been well mixed together, the liquid will need to be poured slowly over the rice and chicken in the dish.

Step Four: Bake in the oven

The chicken and rice bake should be cooked at 375 degrees. It will take up to 30 minutes for all the liquid to be absorbed by the rice. By the time the rice is cooked, the chicken breasts should also have become browned.

Step Five: Serve immediately

This chicken and rice bake is best served straight from the oven. It should not need any extra seasoning, because there is salt in the soup and in the broth, but you might want to add ground black pepper or a few shakes of spicy sauce.
